Designed to rapidly chill up to 50 lbs. of hot, cooked food through the temperature danger zone (135°F to 40°F) in approximately 90 minutes to assure food safety.
Rapid chilling promotes increased product storage life and allows for greater labor productivity in the kitchen. Unit maintains preset food temperature after chilling cycle is complete. Aluminized steel back. Stainless surface with bullnose edge is a perfect base for other kitchen equipment. Dual refrigeration systems on each side of the chilling cabinet. Each system is 120V, 1/2 HP, and comes with its own cord and plug. Both systems are in operation during chill cycles. One continues to operate during Soft Chill cycle for product maintenance. Built in tray slides hold up to (5) 12”x20”x2-1/2” or 18”x26” pans.
SmartChill® microprocessor control system provides critical temperature monitoring. Three probes monitor temperature throughout the food product. System gathers product temperature data and sends to an on-board printer for HACCP record keeping. A second printer also included for food labels. System allows user to set individual operator ID numbers to monitor usage. Audio and visual alarms alert user to high and low temperatures, printer failure and when condenser should be cleaned. Set chilling cycles according to temperature or time. Can also chill according to food product with 75 pre-programmed chilling cycles.
Blast Chill: Takes food product to 41°F or below as fast as possible without freezing. Soft Chill: After Blast Chill cycle is complete, system maintains the product temperature preset by the user, between 34°F and 41°F. Also good for chilling delicate or low density foods such as green salads without freezing. Freeze Chill: Freezes food product as fast as possible, even full loads. User must remove food product after freezing.
